I bring these on our annual trip with friends to an amusement park in Pennsylvania called Knoebel’s.  We rent a big farmhouse and we parents spend our mornings on the porch drinking coffee and eating lemon ricotta cookies.  These cookies are made with ricotta cheese and frosted with a yummy lemon glaze.  Both glaze and cookie have loads of lemon zest.  I like to keep these chilled.  They’re even yummier that way, especially in the summer!
