We loved these the first time we tried the recipe!  These cakey cookies are flavored with cinnamon, nutmeg and of course pureed pumpkin, then iced with a basic vanilla icing that enhances but doesn’t overpower the pumpkin flavor of the cookie.  Man, that totally sounded like a food writer, right?
